woman eating chocolat and drinking wine

We love chocolate just as it is, but there’s a whole world of possibilities to create great pairings between our praline and your favorite spirit.

Usually, the great mix that everyone knows and loves is dark chocolate and red wine, but did you know that you can leave the wine for dinner and be a bit adventurous when choosing a spirit for your Cavaletti? The beverage will depend on the flavour you choose. Here are the top options for each of our six current praline recipes:

Cavaletti 1:

Chocolate and rum find their origins in the Caribbean, therefore they’re the perfect match. Both cane sugar, a main ingredient in rum, and cacao beans are highly dependent on the soil they’ve been planted in. We recommend choosing a high quality rum. Here at Cavaletti we have a weakness for the Diplomático Reserva Exclusiva ou le Santa Teresa 1796, two excellent venezuelan rums.

Cavaletti 2:

The coconut notes are usually sublimated by young wines. It’s up to you whether it’s white, rosé or red. Try to find a sweeter wine, such as a Banyuls grand cru or a Grand Roussillon.

Cavaletti 3:

Our snappy favorite loves a high quality gin. We recommend the japanese Ki No Bi Gin or the indian Stranger and Sons.

Cavaletti 4:

One of our customers’ favourites! Our Cavaletti 100% hazelnuts lives its best life next to a brandy like Calvados, Cognac or Armagnac.

Cavaletti 5 et 6:

There’s a mexican saying that goes “para todo mal, mezcal y para todo bien, también” which means: “for everything that goes wrong, mezcal and for everything that goes right, also mezcal”, so we can agree that there’s no wrong time to drink this smoky liqueur. In mexican gastronomy, mezcal is best paired with citrus and salt, therefore making it the perfect companion for our two newest recipes.

An extra tip: if you choose an all milk chocolate box, you can enjoy it with a nice bottle of rye. However, if you go in a different direction and decide to try an all dark chocolate box, your best bet is to pair it with a Stout.

Some notes for a fabulous tasting:

  • Be mindful of the quality of the spirits you use.
  • Smell the liqueur before pouring. If its scent is harmonious with the chocolate, the taste will be, too.
  • Ice is your best friend. Some spirits might have a presence that’s too strong to be paired with a more delicate chocolate. If this is the case, serving it on the rocks might be your best bet.
  • Finally, listen to your tastebuds! The best combination is the one that you absolutely love (and it might even be one that we haven’t tasted yet!)
